By artfully opening the fillets while keeping them joined, we create an elegant, double-winged presentation that allows for a more even sear and a beautifully delicate, airy texture that yields to a rich, buttery finish.

Each fillet hand-trimmed to remove pin bones and belly flap. Available fresh and individually quick frozen (IQF) in five finishes.
